Ingredients

For the Noodles:

  • 250g egg noodles (or chow mein noodles)
  • 2 tbsp sesame oil (for tossing)

For the Stir-Fry:

  • 200g fresh prawns (peeled and deveined)
  • 1 medium carrot (thinly sliced)
  • 1 red bell pepper (sliced)
  • 1 small broccoli head (cut into florets)
  • 1 small onion (sliced)
  • 2 cloves garlic (minced)
  • 2 tbsp vegetable oil

For the Sauce:

  • 3 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • ½ tsp white pepper
  • 50ml water or chicken stock

Method

  1. Prepare the Noodles
Boil the noodles according to the package instructions. Drain and toss with sesame oil to prevent sticking. Set aside.
  2. Cook the Prawns
Heat 1 tbsp vegetable oil in a wok or large pan over medium-high heat. Add prawns and cook for 2–3 minutes until pink and slightly curled. Remove and set aside.
  3. Stir-Fry the Vegetables
Add the remaining vegetable oil to the same wok. Stir-fry garlic and onion for 30 seconds until fragrant. Add carrots, bell pepper, and broccoli. Stir-fry for 3–4 minutes until vegetables are tender yet crisp.
  4. Mix the Sauce
In a small bowl, whisk together soy sauce, oyster sauce, fish sauce, sugar, white pepper, and stock/water.
  5. Combine Everything
Return the prawns to the wok, add the noodles, and pour in the sauce. Toss everything together over high heat for 2–3 minutes until well combined and coated in sauce.
  6. Serve Hot
Plate the chow mein and garnish with chopped spring onions or sesame seeds for extra flavor.

Cooking Tips

  • Use fresh prawns for the best taste, but frozen ones can also work if thawed properly.
  • For extra flavor, add a splash of rice vinegar or chili oil before serving.
  • Keep the vegetables slightly crunchy for the perfect stir-fry texture.

This fresh seafood chow mein is a quick, colorful, and satisfying dish perfect for weeknight dinners or weekend family gatherings. With juicy prawns, crisp vegetables, and flavorful noodles, it’s a meal that delivers both taste and nutrition in every bite.
