Ingredients

For the Noodles:

  • 200g chow mein noodles (egg or wheat)
  • 2 tablespoons vegetable oil

For the Vegetables & Protein:

  • 1 medium carrot, julienned
  • 1 cup cabbage, shredded
  • 1 medium onion, sliced
  • 1 cup bell peppers, sliced (any color)
  • 2 spring onions, chopped
  • 150g boneless chicken breast, thinly sliced (optional)
  • 2 cloves garlic, minced

For the Sauce:

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 2 tablespoons water


Instructions

  1. Prepare the Noodles
    • Boil chow mein noodles according to package instructions until just tender (al dente).
    • Drain and toss with 1 tablespoon vegetable oil to prevent sticking.
  2. Make the Sauce
    • In a small bowl, mix soy sauce, oyster sauce, sesame oil, sugar, and water. Set aside.
  3. Cook the Protein (if using)
    • Heat a wok or large pan over medium-high heat. Add 1 tablespoon vegetable oil.
    • Stir-fry chicken slices until fully cooked, then remove from the pan and keep aside.
  4. Stir-Fry the Vegetables
    • In the same pan, add garlic and onions, stir for 30 seconds.
    • Add carrots, cabbage, and bell peppers. Stir-fry for 2–3 minutes until slightly tender but still crisp.
  5. Combine Everything
    • Add cooked noodles and chicken back into the wok.
    • Pour the sauce over and toss everything together for 2–3 minutes, allowing the noodles to soak up the flavors.
  6. Garnish & Serve
    • Sprinkle with spring onions and serve hot.
