Ingredients

For the sauce:

  • 3 tbsp sesame paste or tahini
  • 2 tbsp peanut butter (optional for extra creaminess)
  • 3 tbsp soy sauce
  • 2 tbsp Chinese black vinegar
  • 2 tbsp chili oil (adjust to taste)
  • 1 tbsp sugar
  • 1 tsp Sichuan peppercorn powder
  • 2 cloves garlic, minced

For the pork topping:

  • 200g minced pork
  • 1 tbsp soy sauce
  • 1 tbsp Shaoxing wine (Chinese cooking wine)
  • 1 tsp five-spice powder
  • 1 tbsp oil

For the noodles:

  • 250g fresh Chinese wheat noodles (or dried)
  • 2 spring onions, chopped
  • Fresh coriander (optional)

Instructions

Step 1 – Prepare the Sauce
In a mixing bowl, combine sesame paste, peanut butter, soy sauce, black vinegar, chili oil, sugar, Sichuan peppercorn powder, and garlic. Stir until smooth and set aside.

Step 2 – Cook the Pork
Heat oil in a pan over medium heat. Add minced pork, soy sauce, Shaoxing wine, and five-spice powder. Stir-fry until browned and slightly crispy. Remove from heat and keep warm.

Step 3 – Cook the Noodles
Boil noodles according to package instructions until al dente. Drain and rinse briefly under warm water to prevent sticking.

Step 4 – Assemble the Dish
Divide the sauce between serving bowls. Place the hot noodles on top and mix well to coat them in the rich sauce. Add the cooked pork, sprinkle with spring onions and coriander, and drizzle extra chili oil if you like it spicier.

Step 5 – Serve
Serve immediately while hot, mixing everything together before eating to enjoy the full flavor explosion.

Tips for Best Results

  • Use fresh Chinese wheat noodles for an authentic chewy texture.
  • Adjust chili oil and Sichuan peppercorn to control the spice level.
  • The sauce can be made ahead and stored in the fridge for up to 3 days.
