For the rice:

For the chicken marinade:

  • 500g chicken (bone-in or boneless)
  • 1/2 cup thick curd/yogurt
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • Salt to taste
  • Juice of half a lemon
  • Fresh coriander and mint leaves (chopped)

For biryani masala:

  • 2 medium onions (thinly sliced and fried till golden)
  • 2 tbsp oil or ghee
  • A few saffron strands soaked in 2 tbsp warm milk (optional)

Step-by-Step Cooking Method

Step 1: Marinate the Chicken
Mix chicken with all marinade ingredients. Keep aside for at least 1 hour (overnight for best flavor).

Step 2: Cook the Rice
Boil water with whole spices and salt. Add soaked rice and cook till 80% done. Drain and keep aside.

Step 3: Cook the Chicken
In a heavy-bottom pan, heat oil or ghee. Add marinated chicken and cook on medium flame till the meat is tender and the oil separates.

Step 4: Layer the Biryani
In a deep pan, spread half the cooked chicken. Add a layer of half the rice. Sprinkle fried onions, coriander, mint, and a little saffron milk. Repeat the layers.

Step 5: Dum (Steam) Cooking
Cover tightly with a lid or foil and place on low flame for 15–20 minutes. Let it rest for another 10 minutes before serving.


Serving Suggestions

Serve hot with:

  • Raita (yogurt mixed with onion, tomato, or cucumber)
  • Green chutney
  • Boiled egg or salad
  • Mirchi ka salan (spicy chili gravy)
