Step-by-Step Cooking Method
Step 1: Marinate the Chicken
Mix chicken with all marinade ingredients. Keep aside for at least 1 hour
(overnight for best flavor).
Step 2: Cook the Rice
Boil water with whole spices and salt. Add soaked rice and cook till 80% done.
Drain and keep aside.
Step 3: Cook the Chicken
In a heavy-bottom pan, heat oil or ghee. Add marinated chicken and cook on
medium flame till the meat is tender and the oil separates.
Step 4: Layer the Biryani
In a deep pan, spread half the cooked chicken. Add a layer of half the rice.
Sprinkle fried onions, coriander, mint, and a little saffron milk. Repeat the
layers.
Step 5: Dum (Steam) Cooking
Cover tightly with a lid or foil and place on low flame for 15–20 minutes. Let
it rest for another 10 minutes before serving.
