It is widely prepared during winters and festive occasions like Makar Sankranti, Lohri, or Diwali. The warmth of jaggery and richness of ghee make it perfect for both taste and health.

 Ingredients You’ll Need

  • 1 cup whole wheat flour (atta)
  • ½ cup grated jaggery (gur)
  • ½ cup ghee (clarified butter)
  • 1½ cups water (or as needed)
  • ¼ cup chopped dry fruits (almonds, cashews, pistachios)
  • ½ tsp cardamom powder (elaichi)
  • A pinch of nutmeg powder (optional)

 Step-by-Step Method

Step 1: Heat the Ghee
In a heavy-bottom pan or kadhai, heat the ghee on low flame.

Step 2: Roast the Wheat Flour
Add the wheat flour to the ghee and roast it slowly, stirring continuously. The key is patience—roast until the flour turns golden brown and a nutty aroma fills the air.

Step 3: Prepare the Jaggery Syrup
In another pan, add water and grated jaggery. Heat until the jaggery melts completely. Strain to remove any impurities. Keep it warm.

Step 4: Mix Syrup and Flour
Slowly pour the hot jaggery syrup into the roasted flour while stirring continuously to avoid lumps.

Step 5: Add Flavors and Dry Fruits
Mix in cardamom powder, nutmeg powder, and chopped dry fruits. Stir until everything combines well and the mixture thickens.

Step 6: Set the Sweet
Spread the mixture onto a greased plate or tray. Flatten evenly and let it cool for 30–40 minutes.

Step 7: Cut and Serve
Once set, cut into desired shapes—squares or diamonds—and serve.
