Stir-Fried Beef in Oyster Sauce

Ingredients:

  • Flank/skirt steak – 400g (thinly sliced against the grain)
  • Soy sauce – 1 tbsp
  • Cornstarch – 2 tsp
  • Broccoli florets – 2 cups
  • Garlic – 3 cloves (minced)
  • Ginger – 1 tbsp (sliced)
  • Scallions – 2 (cut into 2-inch pieces)
  • Oyster sauce – 3 tbsp
  • Dark soy sauce – 1 tsp
  • Sugar – 1 tsp
  • Sesame oil – 1 tsp
  • Cooking oil – 3 tbsp
  • Cornstarch slurry – 1 tsp cornstarch + 2 tbsp water

Steps:

  1. Marinate sliced beef with soy sauce, cornstarch, and a splash of oil, let sit 15 mins
  2. Blanch or stir-fry broccoli florets till bright green and crisp-tender, set aside
  3. Heat oil in a wok till lightly smoking, sear marinated beef in a single layer till browned, remove and set aside
  4. In the same wok, sauté garlic, ginger, and scallions till fragrant
  5. Return beef and broccoli to the wok, add oyster sauce, dark soy sauce, and sugar, toss to combine
  6. Pour in the cornstarch slurry, stir till the sauce thickens and glosses over everything, finish with a drizzle of sesame oil
