Stir-Fried Beef in Oyster Sauce
Ingredients:
- Flank/skirt steak – 400g (thinly sliced against the grain)
- Soy sauce – 1 tbsp
- Cornstarch – 2 tsp
- Broccoli florets – 2 cups
- Garlic – 3 cloves (minced)
- Ginger – 1 tbsp (sliced)
- Scallions – 2 (cut into 2-inch pieces)
- Oyster sauce – 3 tbsp
- Dark soy sauce – 1 tsp
- Sugar – 1 tsp
- Sesame oil – 1 tsp
- Cooking oil – 3 tbsp
- Cornstarch slurry – 1 tsp cornstarch + 2 tbsp water
Steps:
- Marinate sliced beef with soy sauce, cornstarch, and a splash of oil, let sit 15 mins
- Blanch or stir-fry broccoli florets till bright green and crisp-tender, set aside
- Heat oil in a wok till lightly smoking, sear marinated beef in a single layer till browned, remove and set aside
- In the same wok, sauté garlic, ginger, and scallions till fragrant
- Return beef and broccoli to the wok, add oyster sauce, dark soy sauce, and sugar, toss to combine
- Pour in the cornstarch slurry, stir till the sauce thickens and glosses over everything, finish with a drizzle of sesame oil
